Fudge is candy made from butter, sugar and milk (or cream). The best description is: a soft and creamy chocolate like sweet. Fudge comes in many flavors: milk, pure, white chocolate and also has often and stuffing of nuts, raisins, cranberries or dried apricots. While making fudge, it is intended to postpone the crystallization of the sugar as long as possible. This is done by whisking well (the factory often adds milk fat and corn syrup). The sugar mixture should not be hotter than 116 degrees, and timing is important as the steps must be carried out immediately in order to achieve the right composition. If the mixture is cooled to 110 degrees it should be vigorously beaten, with a mixer. If the mixture is thick and the shine is gone, it can cool further in the refrigerator.
